Whole30 Day 17



Breakfast-  Coffee and some honeydew

Lunch- Ham slices, leftover pork roast and veggies and some salad

Dinner- Egg Salad.... made up my own recipe... It went something like this and it was SO YUMMY

6 hard boiled eggs diced
1/3 ish cup home made Mayo
2 chopped baby pickles
1/4 red onion minced
salt and pepper to taste
a few dashes of paprika

It was SOOO GOOD.  I wrapped it in crispy Romaine leaves and devoured it.     Justin ate it on toast and devoured it.   Raving reviews people.

I snacked on raw unsalted Cashews today with the rest of my family at the mini golf coarse.  I got 2nd.  Whoop.    Took the family to the Amish creamery and I told the nice Amish man there was not one thing in his awesome store I could enjoy.   He gave me a judgy face.  I was steadfast and gave him a judgey face back because he was chubby.   (Though always so nice... not hating... just a little angry that I could not have Trash Can Amish Ice Cream) ...
The egg salad almost made up for it.

 Took a morning blood sugar 127.   Afternoon 86.  
Word.

Popped some tags at the thrify shop.  Gap and Ralph Lauren with the tags still on them.  Whoop!  



Whole30 Day 16

Happy Monday!  It's Spring Break!

Breakfast-  Fruit and coffee

Lunch- Went down to Pass A Grille with friends!  We packed ham slices, Clementines, melons, into our beach bags.  When we left the beach we stopped at Chic Fila... I got a market grilled chicken salad.  Avoided the blue cheese on it the best I could.  Yummy!

Dinner- I made this Cumin Pork Roast and it was awesome!   The rest of the fam had it over rice.  I had it alone and it was still AWESOME!   This would also be good with some gauc on top.

I went to bed really early.  Sugars have still been great.  I think I've finally leveled out my insulin pump ratios.   However, I'm wondering if I add exercise what will happen.   I'd like to start taking a brisk walk every day to amp it up to the next level.  Spring Break would be a good time to start since I have some extra free time.   This may happen tomorrow.  :)

Whole30 Day 15

Half way there.

Breakfast-  Busy church morning!  Brought coffee, strawberries, a Clementine, and a hard boiled egg to church

Lunch- TUNA WRAPS!  I was hangry and it was ready.

2nd Lunch- Chicken Sausage

Dinner-  Mojito Lime Chicken Salad

Went grocery shopping and spent an ungodly amount of money.  But I have so many fun things to make.

Another note:  I am eating massive amounts of food.  I eat little things constantly and I'm never hungry.  Because I'm not eating sugar, grains, or dairy... I can make up for it in fruits, veggies and protein.  It's kind of awesome coming up with new things.

Whole30 Day 14

If you guys could only see me right now...  I'm completely alone in my QUIET house on my reclining couch with a frosty La Croix infused with limes and mangos and my Southern at Heart Food Network show on the Dvr. Do you know Demaris Phillips?   I can't get enough of her shows and I pretend like we're friends in real life while I'm watching.  She teaches while she cooks her southern, Kentucky bourbon goodies.   Ironically, she is making some ridiculous looking brownies that are the fartherst thing from Whole30 compliant I've ever seen.

So Let's talk about Day 14.

Breakfast-  Fresh eggs with veggies and fruit and coffee.  HELLO SPRING BREAK and Jack Johnson songs and wakin up slooooooow!  Chocolate chip pancakes for my kiddies because I'm an awesome mom.

Lunch-  Tuna salad Romaine wraps.   Tuna is quickly becoming a staple in this way of eating.  It's good.  It's fresh and yummy with crispy veggies added... and lemons and limes squeezed all over it with copious amounts of sea salt and black pepper make it amazing.   Also had a hard boiled egg.  It was extra special because Zoe dyed it Miami colors and it said, "I love the Lord a lote" on it.   I love Him a lote too, Zoe.   You are so precious.

Dinner-  Mojito Lime Baked Chicken Tenders, Salad, Eggs, Mangos,

Snack:  Sweet potato chips.  Nom Nom Nom.   Go make some.  The thinner the better.


Diabetes:
I've stopped testing so often because I know that it's always good.  Is that CRAZY?  But it's true.  It's never high.  Diabetics everywhere... quit eating grains (corn, wheat, rice, anything)  just cut it out of your diet and you'll be golden forever.  Easier said than done... but as a person who has had an unemployed pancreas for 26+ years now... I know what I'm talking about.  It's hard and you have to do hard things and man up... sometimes I want to hit people with bread in their hands.... but I've determined it's worth it to feel this good.

I miss cheese.  A lot.   Moving on...

I got on the scale, which as spoken about in earlier posts is breaking a rule, (Rebels Unite!!!) and I was 119.  That's 9 lbs. of shred from 14 days ago which is ridiculous.  I'm definitely not doing this to lose weight, but it's a hella bonus, team.

I am so excited to get blood work done next month at my PCP appointment.  I'm going to have her draw an A1c, just to see how much it's dropped already.  I'm betting a full point.   Dr. Denker (the coolest endocrine doc in the world) are you reading this???  Throw out a virtual high five!  Shalom, brother!

All for now... tomorrow is half way which is an exponetially motivating fact..... (but it's really today, and I'm writing of yesterday, so I'm half way.  Are you confused?  It's like the Time Traveler's Wife.  Is it then or now?  I'm so confused.  Is this real life?  Windy, are you drinking?  No... because alcohol is not Whole30 compliant.    Cheers for now!

Spring Break has arrived!  Grocery shopping tomorrow!  Whoop!

Whole30 Day 12

Breakfast- Coffee, Water, Half Banana   Went to Boosterthon run... left Boosterthon run with a really upset stomach towards the end.

Lunch- I grazed today.  It was very busy and long and I didn't want to eat too much and then run out of food.  I had an apple with almond butter, then a hard boiled egg, then an avacado, and a Clementines and more apple slices at the end of the day.   It worked.  Sipped on citrus infused water all day.  

Dinner-   Chicken sausage, small steak, and broiled red potatoes with coconut oil and salt and pepper.  With plenty for lunch tomorrow! And a good salad!

La Croix and tons of water today.   I'm so tired.  My son and I both fell asleep at about 5pm when we got home from school.    Feel like my body is fighting trying not to get sick.   One more work day til Spring Break!
Today I'm so thankful for encouraging words from my husband and friends.   I appreciate the support!!!  


Blood sugar was 80 when I woke up.  Solid!   Stayed good all day.

Whole30 Day 11

Breakfast-  Coffee and fruit bowl

Lunch-  LeeRoy Selmons with my hubby.  Blackened salmon and steamed brocolli, water, La Croix

Dinner-  Leftover chicken and veggies stirfry and some walnuts later on.

Snacks- Fruit smoothie (Banana, Spinach, Coconut milk, ice, strawberries, manogos) before bed.  Woke up at 80 which was nice.


Dealing with anxiety again.  Set doctors appt.  Hopefully she'll help me sort this all out.  Feel really good.physically... but mentally and emotionally I'm struggling and working through the whys of that.


This way of eating is hard.  But it is also better than what I was doing.  My family is semi eating along with me and I know they've had more GOOD foods put in their bodies than in the past.  I'm happy for that.    

Super duper excited for Spring Break and Easter.  I love Easter.

Whole30 Day 10

It's day 10 and I'm officially bored.  I need something fun to eat.  Headed to Pinterest right after this.

  I took my daughter to get a Blizzard after school because she was so cute and I knew her brother was enjoying ice cream too with the friend he went home to play with.   When the lady opened the drive through window and the smell of ice cream toppings came in the car I wanted to eat a large Blizzard and possibly also 17 Snickers bars.  But instead... I handed Zoe her magnificent Butterfinger Blizzard and drove away.  Then she asked me if I wanted a bite and I said, "You are so sweet.  But Mommy wants to really stick to her commitment and eat only the things that are good for me."  And she said... "Cool, Mom.  You can have an avacado or something when we get home."   I could have smacked the cute right off her face.    HAHA!   I love her.  

Today I miss Diet Coke.  That chemical filled cancer causing sweet necter of Satan.  I miss it.


Breakfast- Fresh berries and egg and veggie bake, coffee, water  

Lunch-  Spaghetti Squash Primavera.   Even better the next day.  I'm obsessed with curry seasoning.  
Dinner:  Chicken and veggie sautee and salad

Snacks:  La Croix, green apple slices, frozen mango, strawberries

Whole30- Day 9

Breakfast-  Made fresh eggs and veggies and coffee.  Monday is my day off.  It was nice to wake up slow.

Lunch- Green Apple with almond butter.  Was doing work and rushing to get shopping done.   It worked.

Dinner:  Spaghetti Squash Primavera.  It was amazing.  Roasted two spaghetti squashes.... made sauteed chicken, mushrooms, onions, bell peppers in a cast iron with coconut oil and a little garlic powder, salt and pepper, and curry powder.  So good.  I love curry.    This will be lunch tomorrow too.

Snacks:  Lots of water today.  Strawberries for DAYS.  Bringing some to share with my co-workers and friends tomorrow.  :)    Early night tonight.  Long, emotional day.

Diabetes:
Another solid low carb day.   Clothes are getting a bit looser.  Looking forward to Spring Break and time to have fun with family and cook yummy things for them.

Whole30- Day 8

Food

Breakfast-  Coffee and Fruit   Off to church with a huge water in hand

Lunch-  Shrimp Salad with Romaine TONS OF STRAWBERRIES while picking in the fields!  So fun!   

Snack- Leftover chicken sautee mixture from Sat.   Yummy!  

Dinner-  Chili's-  Steak, Salmon and steamed broccoli       We had such a sweet time with friends at a baby dedication Justin led for their little girl.   I will confess... I bout lost my mind when chips and queso were put in front of me.  But I waited patiently and it was worth the wait!  The dinner was SO good and I love that after I finish a meal with minimal carbs I don't feel like a beached whale that needs to collapse and die.   I'm not sure if normal people feel that way after lots of carbs... but that's how me... the girl with the bum pancreas feels.   :)    

Snacks:  I had a sliced banana with almond butter before bed.   


I've noticed that the discipline of eliminating dairy and grains has transferred into other areas of my life.  For instance, in the case of eating out with friends... it made me exercise self control and patience.   I'm a pretty impulsive girl who wants what she wants when she wants it by nature... this has been a good way to slow down and think through decisions in more areas than just eating.  I'm grateful.   

Thank you God for strength and better blood sugars.  I'd like to keep this going so my next A1c  ( a blood test that shows my 3 month blood sugar average  is a DRASTIC crazy low number that blows my mind.  That number will be very motivating.  I've not had an A1c that I was completely satisfied with since I gave birth to my daughter... over 7 years ago.

Whole30 Day7

Wooo Baby.  One Week Down.    It's been 7 days since I've had a diet drink which in and of itself is a miracle.   It's also been 7 days since grains and dairy (except coffee cream).

Day 7 Food

Breakfast:   Coffee and Water.  I slept in and then had couch drama and then started cleaning and forgot to eat.

Lunch:   Avacado Lime Shrimp Salad with Romaine.  Yum. Yum. Yum.

Snack:  Sweet Potato Chips.   I chopped up several sweet potatoes into thin slices and baked them low and slow brushed with a bit of coconut oil and salt.   Oh my holy tasty snackness.   It's amazing.  Stop what you're doing right now and make some.

Dinner:  Chicken tenderloins sauteed with EVOO mushrooms and onions.  Awesome.    More sweet potato chips.  I'm addicted.

Clementine, La Croix, lots of water.

Diabetes:
Lows, lows and more lows.   Not bad ones that require assistance from Justin, but low enough to be irritating.  Still working on dialing back Basil rate in tiny tiny increments   Better than being high all the time!  This is the best benefit to this way of eating.

Tomorrow I will prep meals for next week and Pinterest some more ideas.

Whole30 Day 5 and 6

Day 5 Food
Breakfast-  Casserole.  The answer is always egg casserole.  It works on school days.   And coffee.  I got coconut milk.  I might be able to handle this.

Lunch- Leftover chicken roast with red potatoes and carrots.  Still yummy.

Dinner- Salmon with asparagus.  Yes, sir.  Easy and yummy.  

Plaintain chips, lots of water, LaCroix, and an apple pear with almond butter  


Day 6
Breakfast-  Guess what??? It was casserole today.  Tomorrow were going for bacon something.  

Lunch- Didn't really happen.  It was a Clementine and an apple and some water and a La Croix and rectifying an unresolved issue for an important event next week and 3 hours of cheering for sweet students in a track meet.  

Dinner-  Shrimp, avacado, cilantro, lime salad.  Yes.  Yum.   Good stuff.

Basil rate is down to 18 units per day and still haven't had a high over 140.  As you can tell I'm pretty exhaused so I'm gonna be done for today.  Tomorrow brings SATURDAY and refreshment and meal planning for week 2!  Yippee!

Whole30- Day 4

Food:

Breakfast-    Coffee and the Egg Veggie Casserole   It's not getting old yet.  It's so dang yummy.

Lunch-  I devoured leftovers from last night's crock pot chicken, carrots and red potatoes.  So good. All the spices got married and had flavor babies.   Drank a 32 oz. water bottle and then had a La Croix.

Dinner:  Leftover Chicken Zucchinni Poppers wrapped in Romaine and an Apple Pear (have you tried this hybrid? It's awesome!!)  dipped in Almond butter.  More citrus water.

Diabetes:
Confession:  I didn't do one blood sugar all day. This is typical of Wednesdays.  They are my busiest day at school with 8 classes and a private piano lesson... plus other fun prep responsibilities and emails that always pop up.    But I did not have any lows at school.      I'll go do one right now... hang on.  82. Yee haw!   Guess I'll be dialing back my nightime basil rate a bit again.  One of these days I'll hit the magic number.  Justin has been so annoyed with my early morning lows and cries for juice that we just put fruit next to my bed, knowing it will probably happen.  :)   I'm going to go have a few frozen pieces of fruit and pretend it tastes like ice cream Fudge Pops now.  

Tomorrow my salmon and asparagus await me in my fridge.  Yaaaaasssss.

Whole30- Day 3

Food

Breakfast-  Ate some breakfast casserole for breakfast and coffee.  

Lunch-  Tuna salad.... again.... 3rd day... tomorrow change is needed.   Also had a clementine.  Sipped on 32 ounzes of citrus infused water all day.  

Dinner:  Crockpot chicken with red new potatoes and carrots and fresh herbs, also made some grilled greenbeans cooked in coconut oil.  REALLY delish.  

Snacked on a half banana with almond butter and a few frozen pineapple slices before bed last night to ensure NO LOWS and it worked!

Diabetes

 Woke up at about 80 at 6am.   :)  

Clicked back my basil one more unit as I was getting low during class.  Kept correcting with little bites of my Clementine.   :)

Whole30- Day 2

Food

Breakfast-  Egg scramble again with fresh veggies.  Then I made a big egg casserole from Pinterest with lots of veggies. Coffee  

Lunch- Tuna salad with Granny Smith apple wrapped in Romaine leafs.

Dinner- Garlic Spaghetti Squash with two chopped up chicken zucchini poppers  

Snacks- Apple and almond butter, Cucumbers and baby carrots

Took a whole chicken out of my freezer to pop into my crock pot first thing in the morning for tomorrow night's dinner.   Casserole packed up in tupperware for myself and friends for school tomorrow.  

Diabetes

   Decresed basil rate 2 more units.  Had a couple lows today.  I drank a galloon of water today. I also visited the bathroom like a billion times because of that.    Highest sugar reading today was 98. Awesome sauce.

   

Whole30 Day 1

Yesterday I began the Whole30 eating plan.So far so good.  I've already learned and researched a lot and feel like this will be a great way of eating (I REFUSE to use the word DIET) for my life with Type 1 diabetes.  I'm using this blog to record my tips, findings, and food journal to help myself and others on this journey.   I'm not going to link up recipes because I don't have time for that, but I can assure you EVERYTHING is on my board "Whole30" on my Pinterest account.

Day 1: (Food) 

Breakfast:   Eggs scrambled in a bit of coconut oil with lots of veggies.  Aidell's chicken sausage is compliant and delicious.  Baby spinach, peppers, mushrooms, onions, zuchinni all taste great mixed in and bulk it up!

Lunch-  Tuna mixed with tons of veggies and lemon and lime juice squeezed in.  Right before eating I chopped a little Granny Smith apple into it.   Served over a couple Romaine leafs.  Delish.

Dinner-  Zuccini Chicken Poppers

Snacks- Clementines, Apples and celery with almond butter (Fresh Market, almonds only ingredient. so good!), La Croix sparkling berry water filled my afternoon diet coke craving (Yay!) and I purchased Plaintain Chips at Trader Joes under the recommendation of a friend for bedtime munch.  Gotta be disciplined on these because they are compliant (Sunflower oil and plaintains) but full of fat and calories and not that great for you... however... better than Lays!  :)    Also made a big jug of citrus water... Added sliced cucumbers, limes, and lemons to a jug of water.  Easy peasy and so tasty.  

The coconut oil spray from Fresh Market was a great buy.... I'm amazed at how omiting butters and oils is really not changing how tasty things are.

Now... for the one shameful admission.  I'm not giving up coffee creamer.  I'm just not doing it.  Judge me.  Shame me.  I know I'm not a true hardcore Whole30-er... but I am limiting myself to just my morning coffee with 2 tsp. of cream.   No added sugar.  Just get over it cause I have.  :)

Day 1:  (Diabetes)

 There is one immediate result I have seen.  Steady blood sugars.  Haven't had one over 130.  Not even kidding.  Pretty sure I will never add grains back into my diet again.  Dairy... probably in moderation... but I have a feeling grains will be gone for good.  Decreased basil rate by almost 2 units per day.  Decreased bolusing to almost none (only to cover fruits, but found I got low when I chose to do that due to the massive decrease in grains probably)
